Our Cheese
All our hard cheeses are traditionally cloth bound and hand dressed with vegetable oil which
produces a distinctive rind.
Bertelin Staffordshire - Awarded a 'Highly Commended Certificate' in the Specialist Cheese Makers section at the International Cheese Awards 2011 and described by the judges in 2009 as "An outstanding cheese, well made, beautifully presented, clean, creamy flavour with an exciting future". This cheese has been awarded PDO status (Protected Designation of Origin; other cheeses with PDO include Stilton and Parmigiano Reggiano) due to its old monastic recipe and can only be made with milk produced from cows in Staffordshire. It has a smooth, slightly crumbly texture and a creamy, fresh, lactic flavour..
Bertelin Eccleshall Red - A deep orange colour achieved by adding annatto (a natural plant extract) gives this cheese its attractive finish.
It is a traditional mature farmhouse cheese with a strong yet rounded flavour and is as much at home on a cheese board as it is in a ploughman's or chunky sandwich.
Bertelin Blue - Our newest addition - this delicate soft blue is handmade in small batches.
According to our wine expert, Bertelin blue is best served with a sweet white such as Sauternes or a bold red Cabernet-Sauvignon.
Bertelin White Derby - We are working to put this underrated cheese on the map by producing a tasty artisan Derby that won silver in the 2009 International cheese awards.
Derby uses Cheddaring during its production process but is not a Cheddar. Using lower temperatures on the curds means this cheese retains more moisture and results in a creamy, sweet yet mature flavour.
Bertelin Derby with Chives - Few extra ingredients deserve to be added to our cheese but we couldn't resist the beautiful marriage of mature cheese and chives!
We add the chives during production so the flavour permeates through the cheese during the 7 months spent in the ageing room on the farm. This means that this cheese has a natural rind just like all our others.
Derby and chives makes an exciting and different addition to any cheese board.
Bertelin Smoked -
Our crumbly Staffordshire PDO is traditionally smoked over oak chips for a secret amount of time, resulting in a sweet delicate smoked flavour which compliments this cheese as does a Cabernet or Syrah grape red wine.
